Garden Grove sits inside Cottage Industries on 8th Street, a food-hall setting that changes the visit: you order matcha and then have somewhere to take it. Junbi means preparation in Japanese, and the founders built the company around vetting farms before anything else happens. We find that work shows up in a plain matcha latte more than in any of the flavored ones. The board is long. Cold and hot matcha lattes, the dirty versions with espresso through them, a guava matcha and a Madagascar vanilla among the rest. It runs late every night, which for Little Saigon makes it a genuine after-dinner option.
