It keeps the later hours of the two San Gabriel Valley rooms, stretching further into the night at weekends, and the food-hall setting means the matcha is usually the last thing ordered. The company name translates to preparation, and the founders apply it to sourcing: farms in Japan get vetted before a single drink is designed. Cold and hot matcha lattes anchor the board, the dirty versions add espresso, and we would take the guava or the Madagascar vanilla for the playful end of it.
