That taxonomy runs the shop, and the Silver Lake room on Sunset applies the same imagination to what it pours. Owner Tohm Ifergan sources from an ever-expanding list of roasters, and the bean shelf is one of the strongest in the city. Tonics, coconut, black sesame and cream tops turn up in seasonal builds that read as slightly absurd in the right way, and every pour-over comes with its tasting notes listed. The strawberry matcha and the Matcha Einspanner are the two we point people at, one layered with fresh fruit and the other capped with brown-sugar sweet cream.
